It may be Winter, but any season is a good time for ice cream! Today is National Strawberry Ice Cream Day and I’m excited to share a healthy twist on this classic treat.
Strawberries are an excellent source of vitamins C and K as well as providing a good dose of fibre, folic acid, manganese and potassium. Their fibre and fructose content may help regulate blood sugar levels by slowing digestion and is thought to have a satiating effect. (BBC Good Food)
This strawberry “nice” cream is easy to make and only uses 2 ingredients.
Ingredients:
2 cups strawberries
2 bananas
Instructions:
-Slice bananas and strawberries
-Arrange on a baking sheet in a single layer and freeze for 2 hours
-Remove from freezer and place in food processor
-Blend until smooth (this may take a few minutes. Don’t worry if it crumbles at first, it will get smooth)
-Enjoy!
*The remaining nice cream can be frozen in a loaf pan for up to 5 days. Make sure to let it sit out for 5 minutes before eating.
